1. Playa del Carmen

   Most visitors know Playa del Carmen for its turquoise sea, beach clubs and cocktails at sunset. But when the daylight fades, the city's real appetite begins to emerge. A few blocks inland, the soundtrack changes from crashing waves to chopping knives, sizzling griddles and the steady rhythm of tortillas being pressed by hand. This is where Playa's migrant communities gather to eat, bringing together recipes from every corner of Mexico to create one of the country's most surprisingly diverse food scenes.
 Before we get started, our tour reflects the local cuisine and the limitations of traditional eateries mean we unfortunately cannot cater for every dietary restriction. Here's an honest appraisal so nobody is disappointed:

2. Our evening begins with the kind of food Mexicans crave. We'll start with a gordita de chicharrón y queso Oaxaca, where crisp corn dough gives way to rich pork and beautifully melting cheese. Then comes one of central Mexico's greatest late-night inventions: the pambazo. This iconic sandwich is dipped in vibrant chilli sauce before being griddled until crisp, creating a gloriously messy masterpiece that's worth every napkin. It's comfort food in its purest form, and the perfect way to begin our culinary road trip across Mexico.

3. As twilight settles over Playa del Carmen, the city's taquerías come into their own. We'll discover just how varied Mexican cooking can be with fluffy tamales filled with roasted poblano peppers and cheese, before smoky tacos al pastor are carved straight from the spinning spit in one of the country's most recognisable culinary traditions. Alongside come beautifully grilled sirloin tacos, proving that sometimes the simplest recipes are the hardest to improve. Each stop represents a different state, a different family tradition and another piece of Mexico's remarkable culinary puzzle.

4. Our journey continues with some of Mexico's most treasured regional specialities. Rich enmoladas introduce the extraordinary complexity of mole, the celebrated sauce that can contain more than thirty carefully balanced ingredients. We'll also try huitlacoche quesadillas, showcasing the prized corn fungus affectionately known as the "Mexican truffle", whose earthy flavour has been celebrated since long before European settlers arrived. Finally, we'll pull up a chair for suadero, the wonderfully tender slow-cooked beef that has become one of Mexico City's defining taco fillings and a favourite among late-night locals.

5. We'll finish where our journey first began, back on the Yucatán Peninsula. A classic panucho de pollo, with its crisp tortilla stuffed with refried beans and topped with shredded chicken, reminds us why Yucatecan street food has become beloved far beyond its home region. Then comes machacado de elote, a creamy sweet corn dessert that somehow feels both completely unfamiliar and instantly comforting, bringing our evening to a fittingly nostalgic close. By the time we return, you'll have crossed Mexico without ever leaving Playa del Carmen. From the Yucatán to Mexico City and beyond, you'll have uncovered the neighbourhood kitchens, migrant traditions and regional recipes that make this one of the country's most exciting places to eat after dark, a side of Playa few visitors ever discover without a local tastemaker leading the way.
