As a chef originally from Yucatán, I will share with you the traditional techniques that have been passed down from generation to generation. During the class you will learn and participate in: Artisanal Milling and Seasoning: Grind your own pasta with our traditional tools to achieve the exact balance of flavor. Dough and Hand-Made Tortillas: Learn the exact point of the dough and the traditional technique to press and puff tortillas on the griddle. The Perfect Pibil: Discover the marinating technique, the use of the banana leaf, and the secrets of Yucatecan adobo Salsas in Molcajete: Prepare the iconic Xnipec sauce (red onion and habanero) and traditional roasted sauces. Sweet Touch: Prepare crispy homemade churros to close the session. Intimate and Air-Conditioned Environment: Enjoy a comfortable workshop and drinks bar in an intimate space for a maximum of 4 people.

What an experience! Jair gave us not only a cooking experience but we learned so much about the rich Mayan culture. The food was probably the best I had in Tulum this trip and the open bar was an added bonus. I would totally book again!
