Yagul
The journey begins with a visit to Yagul, where we will walk among ancient vestiges that narrate the birth of agriculture in Oaxaca and the deep bond between man and maguey. Here we will learn to recognize different species of agave and the history that each keeps.

San Pablo Villa de Mitla
The next part will be given in the palanque of the Mezcal Artesanal Noble Coyote in Mitla, where we will be welcomed with a welcome cocktail and traditional snacks. Master Don Valeriano Monterosa, who has more than 40 years of experience in the production of mezcal, will take us hand in hand through the ancestral processes that transform the agave into a unique spirit: where we will light a fire to live an agave bake and know the processes of grinding, fermentation and distillation. We will continue with a guided mezcal tasting of six carefully selected expressions, where we will explore aromas, flavors and traditions. In the evening, we will enjoy a signature meal looking at the mountains surrounding Mitla. The evening culminates with one of the most symbolic moments of the Mezcalero process: we will witness the traditional agave oven cover. An ancient ritual marked by fire, earth and patience.
