With the help of our Chef(fe), you will prepare the choux dough and learn all the tricks to recreate it successfully back home. You will pipe the éclairs and bake them. While the éclairs are in the oven, you will make a creamy chocolate pastry cream with a Mexican twist. After a well-deserved break, you will fill the choux, prepare the chocolate glaze and decorate them. Finally, you can sample these delicious éclairs and take the remaining ones with you to enjoy after the class. Enjoy this unique, completely hands on workshop. You will get to use our home made 60% cocoa dark chocolate that has an intense flavor. Last but not least, you will bake while enjoying a wonderful view overlooking the sea!

Eclairs Fell Flat
Our hosts were very friendly and we enjoyed ATTEMPTING to make eclairs with their guidance. Unfortunately, the eclairs did not come out as they should have. The recipe we were provided was missing many key techniques and details. We used pens to record the additional information as we went. I later looked up eclair recipes online and found that the techniques are very different than what this experience instructed… and the main differences appear to be directly related to why our eclairs fell flat (literally) and couldn’t be filled. The hosts shared that the prior group’s eclairs did not rise either. It’s clear that in order for this experience at the Chocolate Museum to be successful their recipe and technique need an overhaul.
Response from the operator: I am very sorry, Kathy, that a few of the choux pastry for the éclairs came out flat. This technique is indeed very delicate and the slightest lack of moisture can have an impact on the final result. We will work on improving the process in order to avoid any future disappointment. I hope you still enjoyed eating them!

Don’t Miss It!
Returned to the Choco Muséo for the first class of this trip. Eclairs! The instructor, Ney, was excellent. Knowledgeable and great at teaching. I can’t wait for the other two classes I’ll be taking next week!

Delicious souvenirs at the end
Monica and Rod were great teachers. They let us taste everything along the way and it was delicious. Baking was easy with them and they provided great tips along the way to know we were on the right track when we do this at home. The view of the ocean from our baking station made it even better.
