    Authentic Oaxacan Cheese making class with Andrea

    It was wonderful! Andrea (chef) makes the best tamales I've ever had. She served us coffee and tamales. Then we started to learn about cheese in Spanish. Unfortunately Andrea does not speak a word of English so bring a fully charged phone so u can videotape the class. Andrea also provided a translator who met us at a location and then we had to walk a lot of blocks to get to Andrea's home. I think it would be better to provide people who sign up for class to give the address. It's a short taxi ride and not so much walking. Getting to her home is a walk up a small hill and when one gets inside , it's like a walk into the distant past . Andrea learned from her mother and the recipe is passed down. It was fascinating. And she sent us home with a large ball of string cheese, and a wonderful basket filled with queso Fresca. Amazing class . Andrea and her family were absolutely wonderful. We had such a good time. I highly recommend

    As a long-time fan of...

    As a long-time fan of Oaxaca's famous cheese, having the opportunity to make quesillo and queso fresca was exciting enough. But after meeting expert cheesemaker Dona Andrea and learning about her connection to this cheese's origin, we quickly realized just how special this experience was. We were treated to a delicious homemade breakfast before we began the process, and I was surprised how much we learned every step of the way. I can't wait to recommend this experience to others who are visiting Centro Oaxaca.

    Perfect way to spend a morning in Oaxaca!

    One of our best experiences in Oaxaca! Our host was amazing and so knowledgeable, and we loved that we got to make the cheese rather than just watching as we have experienced in some other food experiences while traveling. We got a delicious breakfast and learned so much. The space we were in was wonderful and we could have stayed and had a drink all day! Highly recommend to anyone in the area.

    A Must Cheese Experience!

    Dona Andrea is the best cheese maker in town, her craft taught to her from her mother and grandmother. She is a master and felt very privileged to have learned to make cheese from her. She is sweet and so generous, open to share her history and life story. Now about the cheese, it was by far the best cheese I’ve had in Oaxaca. You will not find her cheese anywhere else, it’s an elaborate process that’s no longer made the traditional way. She makes quesillo, fresh cheese, Philadelphia cheese, and requesón. I highly recommend taking her cheese making class. It’s a dying craft that needs to be preserved.
