You can watch the chef pour the bright yellow rice batter into hot pans, making a loud sizzling sound—which is actually what "Xèo" means! These large, thin crepes are fried until super crispy and stuffed with shrimp, pork, and bean sprouts. How to eat it: Don't worry about chopsticks here; we use our hands! Your guide will show you how to tear off a piece of the crispy crepe, wrap it inside a fresh lettuce leaf with some local herbs, roll it up, and dip it into a sweet and tangy fish sauce.
