Priceless pasta perfection!!!!
Chef Niccolo’s vegan cooking class was nothing short of a Masterclass in Italian heritage cooking. Niccolo’s expertise - in both cooking, and in being a sommelier, which I did not see mentioned in the booking description - was evident, and the care he took in crafting both pasta dishes to our preferences was unmatched, presenting appetizers and wine pairings to our pastas, and explaining the tradition and technique behind each dish. The pastas - we choose ravioli, which was stuffed with traditional Sicilian pesto and smothed in a (vegan) cream garlic sauce, and the tagliatelle, which came to life while sizzling in *the best* made-from-scratch tomato sauce - were the best we've ever had. The tiramisu we made is sure to become our new staple dessert we make when entertaining company due to how equally easy, quick, and scrumptious it was. The wine pairing was perfect, and don’t even get me started on how smooth and sweet the homemade limoncello shot was. The level Chef Niccolo’s fresh cuisine rests on is only rivaled by his contagious enthusiasm and dedication to the craft. We believe the best experiences are ones shared with friends, and because of Niccolo’s warmth, openness, and expertise, we left with full bellies, a wealth of Italian cuisine knowledge, and a new friend. Me and my partner will never forget this incredible cooking class.
