Cooking Japanese Classics

What an interestingly good time I had cooking at Juraku! I learned about Miso soup, Onigiri, the ingredients in them, and the flavor profile of Umami. I got to make foods I probably wouldn't have attempted to make otherwise. Learning about the broth components and the temperatures to cook ingredients at for their ultimate flavor made me think a lot about the ways I currently cook. I feel like I could make both miso soup and onigiri at home now if I wanted to! I was very impressed by the patience of the staff and the way they walked the group through each step. There was also times to participate in making each item, and I thought that was fun!

Became the master of the "Umami"

Although I already knew how dashi is made, it was still fascinating to learn about it in more depth. It was my very first time seeing a whole bonito block (which looked just like a piece of wood) and shaving it into flakes myself. Not only did I get to make and eat rice balls, but I also enjoyed delicious side dishes made with dashi. I was completely satisfied! 😊

Good

This was a good experience. I was one of the CIEE students. Getting to know everybody and learning what they had to offer was very nice. I do, however, which there was more emphasis placed on hygiene for participants before/during cooking (washing hands, tying long hair back, etc.)

Authentic Cultural Immersion

What a wonderful cultural immersion experience! I learned more about the foundation of traditional Japanese cuisine through a dashi making session, plus got to make my own onigiri which was delishhh. I also thoroughly enjoyed learning about calligraphy to write kanji—which I got to take home with me (talk about a wonderful souvenir!!). I’m hoping I’ll have the opportunity to go again before I head back home, so if you have the chance to make a stop here TAKE IT.
