Start with an everyday serrano, your baseline, then meet the ibérico, where the breed shows itself in fat marbled through the muscle. The leap comes with acorn-fed ibérico from pigs raised in the oak woodlands on nothing but acorns, where the salt fades and the fat melts on your tongue into toasted hazelnut. Along the way you learn the art of cutting jamón, and why cava, not wine, is the ham's natural partner. I had great experience having a classic Jamón tasting in Barcelona with my friends. Iván is a fun approachable guide who took us through a whole variety of Ham and answered all our questions about the processes and origins of the cava and ham consumed. A different kind of tasting to go with your friends :)

It was beautiful to enjoy this experience. Ivan was wonderful, his kindness and everything he knows about ham and wines makes you want to learn so much more. I would love to do it again with my family. It's a really great plan if you are traveling and want to discover part of the history, culture and gastronomy of Spain.

Iván made the experience memorable though the products were great. I enjoyed the two different types of cavas and the five tastings of the Iberian cuts. I can’t tell exactly which was my favourite since I love them all! Besides having a fabulous experience I learnt a lot! Thank you!
